Cook to temperature, not to timeFood safety guidance puts cooked fish at 63 °C / 145 °F. Many cooks prefer salmon at 50 to 55 °C, which runs medium rare to medium and is noticeably moister, and that is a personal risk decision rather than a recommendation. If you are pregnant, elderly, very young or immunocompromised, cook it to 63 °C.

Times assume a preheated basket and a single uncrowded layer.

How to air fry salmon

  1. Skin side down, and leave the skin on. The skin is a heat shield. It protects the flesh from the direct blast underneath and keeps the fillet from drying at the base. You can leave it on the plate afterwards if you do not want to eat it.
  2. Dry the top and oil it lightly. A wet surface will not colour. Pat it, then brush on a thin film of oil so the surface browns rather than steams.
  3. Do not flip it. Salmon flakes apart when you turn it. The circulating air cooks the top perfectly well on its own, which is exactly what an air fryer is for.
  4. Go by thickness, not weight. A thick centre cut piece and a thin tail piece can weigh the same and need three minutes difference. Measure the thickest point: roughly 4 minutes per centimetre at 200 °C.
  5. Pull it at 50 °C for medium. The centre climbs another two or three degrees while it rests. At 63 °C, the temperature charts often quote, salmon is firm and chalky and the white albumin has squeezed out onto the surface.

The white stuff that appears on overcooked salmon is albumin, a protein forced out of the muscle as it contracts. It is harmless, but it is a reliable sign the fish went too far. Almost nobody who sees it wanted their salmon that way.

Frozen fillets work without thawing. Add about five minutes, and check with a probe rather than trusting the number, because freezing changes how fast heat travels through the flesh.

Should I cook salmon skin side up or down?

Skin side down the whole time. The skin protects the flesh from the direct heat coming off the basket and crisps while it does it. Flipping salmon usually just breaks the fillet.

How do I know when it is done without a thermometer?

Press the thickest part with a fork and twist gently. Done salmon flakes apart and looks opaque most of the way through, with a slightly translucent line at the very centre if you like it medium. If it resists, give it another two minutes.

Why does white stuff come out of my salmon?

That is albumin, a protein that gets squeezed out when the muscle fibres contract. It is harmless and it means the fish is cooking fast or going past medium. Lower heat and a shorter time reduce it.
