Cook to temperature, not to timeWings are safe at 74 °C / 165 °F, but like thighs they are better past it, around 80 °C / 175 °F. There is very little meat and a lot of skin and connective tissue, so the extra heat improves them.

Times assume a preheated basket and a single uncrowded layer.

How to get air fryer wings genuinely crisp

  1. Dry them properly. Wings come out of the pack wet. Pat every one until the skin feels tacky. Any surface water has to evaporate before the skin can crisp, and that time comes out of your cooking window.
  2. Toss with baking powder, not baking soda. Half a teaspoon of baking powder per 500 g, mixed with the salt. It raises the skin pH, which speeds up browning and helps the surface blister rather than tighten. This is the single trick that separates air fryer wings from oven wings. Use baking powder: soda tastes metallic.
  3. Single layer, always. Wings stacked on wings is the most common mistake here. The pieces touching each other stay pale and rubbery. Two batches beat one crowded basket, and the first batch reheats in three minutes at the end.
  4. Shake the basket twice. Not once. Wings are irregular and they settle into positions where one face never sees moving air. A shake at a third and again at two thirds fixes it.
  5. Sauce after, never before. Anything wet on the skin during cooking undoes all of the above. Cook naked, then toss in sauce in a bowl the moment they come out.

Wings are safe at 74 °C like any chicken, but unlike breast they are better past it. Take them to 80 °C or so and the connective tissue in the joint softens. There is very little muscle here to dry out.

If you are cooking a lot, hold finished batches on a rack in a low oven rather than stacked on a plate. Stacked wings steam each other and lose in five minutes what took twenty five to build.

What is the two stage method and is it worth it?

A lower temperature first to render the fat out of the skin, then a hot finish to crisp what is left. It takes two minutes longer and the difference in texture is large. This is the closest an air fryer gets to a proper deep fried wing.

Why are my wings soggy?

Usually a crowded basket. Wings need space for air to move around each one, and piling them in steams them instead. Cook in two batches rather than one crowded one. Wet marinades cause the same problem, so sauce them after cooking.

Do I need to use oil?

No. Wings have plenty of fat in the skin and render their own. A light spray helps seasoning stick, but oil beyond that just smokes.
