Duck, quail, altitude and more
Quail egg cooking time is about two minutes for a soft yolk and four for hard boiled. Timings by doneness, how to peel them, and why the usual advice does not scale down.
About 2 minutes for a runny yolk and 4 for hard boiled. A quail egg weighs around 10 grams, roughly a fifth of a hen egg, so it heats through very fast.
Those are boiling times from a rolling boil with the eggs going in cold from the fridge. Cooking time changes with the starting temperature, so eggs left on the counter for half an hour run about thirty seconds faster.
The margin for error is small. Thirty seconds is a meaningful mistake at this size, in a way it is not with a hen egg. Use a timer rather than watching the clock.
The timing does not scale the way you would guess
A quail egg is about a fifth the weight of a hen egg but takes roughly a third of the time, not a fifth. Heat has to travel to the centre and that distance scales with the cube root of volume, not with volume itself.
This is why halving a recipe time for a smaller egg overcooks it, and why the calculator does the arithmetic rather than asking you to.
Peeling them
This is the real difficulty. The shells are thin and brittle, the membrane is tough, and there is very little egg underneath to survive a bad peel.
The reliable method is to crack the shell all over by rolling gently, then peel starting from the fat end while holding the egg under cold running water. Some people soak them in vinegar for a few minutes first, which softens the shell enough to slide off in pieces. It works, but you have a narrow window before the egg itself starts to suffer.
Expect to lose one or two out of a dozen while you get the feel for it.
What they are used for
Hard boiled and halved on salads, skewered for canapés, pickled, or dropped soft boiled into ramen where the small size means one per bowl is a garnish rather than a component.
In Japanese and Korean cooking they turn up soy braised alongside larger eggs. In Filipino cooking they are battered and fried as kwek kwek.

Common questions
What is the cooking time for quail eggs?
Two minutes for a runny yolk, three for jammy and four for a fully set hard boiled egg, timed from the moment they go into water at a rolling boil. Straight from the fridge those are the numbers. From room temperature take about thirty seconds off each one. The eggs are small enough that half a minute genuinely changes the result, so use a timer.
How many quail eggs equal one chicken egg?
About five by weight. Recipes that call for a hen egg work with five quail eggs, though cracking five tiny shells is more effort than most people want.
Are quail eggs safe to eat raw or lightly cooked?
They carry the same salmonella considerations as hen eggs, and they are less likely to be pasteurised because they come from small producers. Cook them through if you are pregnant, elderly, very young or immunocompromised.
Egg times come from the thermal-diffusion equation for a spherical egg published by Charles D. H. Williams (University of Exeter), calibrated so a large fridge-cold egg at sea level matches the times cooks actually use. Size, starting temperature and altitude then follow from the physics. Treat the result as a very good starting point, not a guarantee, because pans, hobs and eggs all vary.
